Chewy Chocolate Chip Cookies

So I have been told by quite a few people that my chewy chic chip cookies are the best they have ever had (better than M&S :O ) and so I have decided it’s time to share the yumminess!

Clara’s Chewy Chocolate Chip Cookies
2 1/2 cups of all purpose flour
2 teaspoons cornstarch
3/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda / bicarbonate of soda
1 cup / 227g unsalted butter, softened to room temperature
1/2 cup white granulated sugar
1 1/2 cups brown sugar, preferably light brown sugar but any will work
1 large egg and 2 egg yolks, at room temperature
1 Tablespoon vanilla extract
2 1/2 cups chocolate chips / chocolate chunks


In a large bowl, whisk together flour, cornstarch, salt, baking powder and baking soda. Set aside.

In the bowl of your mixer, add the butter and the granulated and brown sugars. Cream together on a high speed using the beater attachment for 3-4 minutes or until light and fluffy.

Add in eggs one at a time, beating until combined. Add in the vanilla extract and beat on medium speed until smooth.

Turn the mixer to low and add the flour mixture in three parts, beating after each until well combined.

Last but not least, stir in the chocolate chips or chunks (whichever you prefer) using the dough hook attachment for your mixer.

Wrap dough in cling film and refrigerate for 1-2 hours.

Preheat oven to 350°F / 200°C.

Scoop cookie dough into balls using a tablespoon, onto a baking tray lined with greaseproof paper. The dough must be at least 1 1/2 inches apart as they spread quite a lot when cooking. (Tip: make sure the dough stays in balls, they will spread, don’t worry!)

Bake for 10-12 minutes. Remove from oven even if the cookies look undone.

Let cool on tray before transferring to wire rack. And then eat 😀

These can be stored for up to 5 days in an airtight container or sandwich bags.These can also be made without a standing mixer (it’s a great arm workout ) !
